In late March, Persians all over the world celebrate their New Year holiday, Nowrun, around the spring equinox. We prepare some classic and symbolic dishes, which gives us a lens into their very fragrant and hospitable cuisine.

Menu to include: Cucumber & Pomegranate Salad, Chicken Stew with Green Herbs & Citrus, Persian Jeweled Rice, Beet Raita, Persian Love Cake with Rose-Scented Berry Compote

A World of Flavors

Memories of travel bring back thoughts of faraway meals with their unique flavors and ingredients. When we can’t travel to exotic places, we can bring adventure into our home kitchens by preparing authentic recipes from foreign lands.

This spring, we seek places with distinctive cuisines to discover new culinary secrets. For each country, we prepare recipes together under the supervision of our chef. Afterwards, we sit down to enjoy our meal with a glass of Jones wine and review what we’ve learned. 

Our limited number of cooking classes is snuggled in between our busy farm harvest seasons. Each class is unique and especially developed for its scheduled day so we can highlight the regional, farm food ingredients of the season. Our classes are taught using a combination of cooking demonstration by our expert chef, Sherry Swanson, and hands-on preparation by the class participants. Jean Jones, Registered Dietitian-Nutritionist, discusses the cultural and nutritional aspects of the foods we are studying. Farm educators, Emily Freund and Melanie DeLuca, organize the class presentations and offer sound cooking advice while we cook together. We conclude each class by dining at our ample farm table, enjoying a specially selected glass of Jones wine. Students leave with copies of our simple, flavorful recipes and other relevant information.
