This colorful vinaigrette can be made with fresh or frozen berries.
For Strawberry Champagne vinaigrette:
½ cup strawberries, hulled and sliced
2 Tbsp Champagne vinegar
1 Tbsp sugar
1 Pinch sea salt
For the Salad:
4 cups spinach leaves (4 ounces)
4 Tbsp blue cheese (2 ounces)
¼ cup strawberries, sliced and hulled
¼ cup walnuts, chopped & toasted
For the vinaigrette: In blender, purée all ingredients (strawberries, vinegar, sugar, and salt) until smooth.
For the salad: In medium bowl, toss together spinach, strawberries and Champagne vinaigrette. Mound 1 cup dressed spinach on each plate. Top each salad with 1 tablespoon cheese, and 1 teaspoon walnuts. For a variation, try using a variety of fresh greens.
