One of our favorite teabread recipes!
Ingredients:
3 eggs, beaten
1 cup vegetable oil
2 cups sugar
2 cups unpeeled grated zucchini
2 tsp vanilla
3 cups flour
½ tsp baking powder
1 tsp baking soda
1 tsp salt
3 cups fresh blueberries
Directions:
1. Preheat oven to 350˚.
2. In a medium bowl, combine first five ingredients (eggs, oil, sugar, zucchini, vanilla).
3. Sift dry ingredients together and add to batter.
4. Gently fold in blueberries. Pour into a loaf pan and bake for about 35 minutes, until an inserted toothpick comes out cleanly.
5. Cool before slicing.
