The thinly sliced delicata look like flowers on top of this gorgeous pizza, because of the subtle dark green ribs in the squash.
Ingredients:
1 pizza crust (or whole wheat foccacia)
Olive oil
Salt and pepper
1 medium delicata squash (or dumpling squash)
4 yellow onions, sliced thin
1 small package of gorgonzola cheese
Directions:
Place sliced onions in a large skillet over medium-low heat. Drizzle witholive oil and salt and let simmer for 30 minutes. Onions should be soft and transparent.
Hollow out a delicata squash, remove seeds, and slice into thin slices (1/4 inch) so that they look like flowers. Arrange on a baking sheet anddrizzle with olive oil, salt, and pepper. Roast in the oven at 350degrees farenheit for 10-15 minutes, or until the squash begins to carmelize and become brown.
Meanwhile, spread the pizza dough into a half-sheet pan or a roundpizza pan. Drizzle with olive oil and salt. Scatter with carmelizedonions and arrange delicata squash. Place a dollop of gorgonzola cheeseinto the center of each squash “flower.” Bake at 425 degrees farenheitfor 10-15 minutes or until the underside of the pizza crust is a light brown color. Serve warm.
To add variety to the pizza, roast the squash with sage, use parmesan cheese instead of gorgonzola, and experiment with different squash.
