Super fast, super easy and perfect for a weeknight meal!
Ingredients:
2 delicata squash
1 red onion, thinly sliced
2 Tbsp olive oil
¼ cup roasted pumpkin seeds
Directions:
Preheat oven to 375 °F.
Wash squash, cut open lengthwise and remove seeds.
Cut off ends and cut squash into half moons about 1-inch wide.
On parchment lined baking sheet, toss with olive oil and red onion. Roast for 35-40 minutes.
Top with roasted pumpkin seeds and serve.
