Dessert Wines
Style and Flavor Profile
One of three dessert wines, Raspberry Rhapsody uses American grown raspberries to create a sweet wine bursting with concentrated raspberry flavor. This 100% fruit wine pairs well with anything chocolate.
Food Pairings
• Chocolate cake/ cheesecake
• Dark chocolate pots de crème/ dark chocolate truffles
• Ricotta, fresh mozzarella
Wine Making Process
• Similar to red grapes
• Fermented with skins 5 days
• Aged in stainless steel (7 – 9 months)

Style and Flavor Profile
Our blueberry dessert wine is made from 100% blueberries. A smooth, sweet and slightly tart full-bodied dessert wine.

• Cheesecake or other creamy desserts
• Game meats like duck or pork
• Ice cream
• Fruit, especially lemon desserts
• Cheese course (Cheddar, feta, goat cheese)

• Similar to red grapes
• Whole berries are fermented for 5-7 days
• Aged in stainless steel (7-9 months)
Style and Flavor Profile
Early on in the fermentation process our own grape brandy is added. This halts fermentation, preserves the sweetness and increases alcohol content to 18%. The addition of brandy is what makes this a fortified wine.

Wine Making Process
Made in traditional Porto method, barrel aged 2 years
